Creamy Homemade Chocolate Syrup

This recipe can be changed to fit your family's tastebuds! This can also be made dairy free for anyone that has a dairy intolerance, like my son does. I use this chocolate syrup to make chocolate milk, syrup on ice cream, and more!
Make sure you shake before using to make sure no cocoa settles to the bottom. If you are making chocolate milk, it may take a few extra seconds to stir into milk. Store bought syrups have a chemical in them to make the syrup dissolve and disperse into your drink. Since this in homemade, it will act differently than store bought. For the better, of course! You may double this recipe; just make sure you're using a big enough pot to allow syrup to boil without you being burnt!
Measurements:
1 1/2 cup milk
1 1/2 cup sugar
1 cup unsweetened cocoa powder
Combine the milk and cocoa before heating and whisk the best you can to make sure it is mostly incorporated.
Begin to boil. Note- this does not need to be an aggressive boil, just gentle. I put the burner on med/high heat and whisk gently the entire time to make sure you're not burning the cocoa.
Once you see it's starting to get warm, add the sugar! I use regular pure cane sugar. (I have never used coconut sugar before, but you are welcome to experiment!)
You must continually whisk to avoid burning your syrup! Keep whisking as it comes back to a boil and to help sugar dissolve.
Allow syrup to boil for 3-5 minutes. This is the time where I use my best judgement to see how thick it is getting. (If you use milk, you can make it thicker than water. Milk gives a much richer flavor. You can also use cream for deep creamy consistency. However, I think the perfect middle ground is a full fat milk.
Once you see it begin to thicken to how you like, remove it from the heat and stir wile it begins to cool. This helps it cool down faster and it will thicken much more once it does cool.
Pour into mason jar and leave the lid off until it cools down mostly. (If you use milk, store in the fridge. If you use water, you may leave it on the counter.) It is good up to 2 weeks in the fridge. Enjoy!! :)
